Détaillez en bâtonnets l'aubergine lavée et essuyée. Epluchez et émincez l'oignon rouge.
Dans une poêle, chauffez l'huile d'olive. Faites cuire à feu moyen pendant 5 minutes environ les morceaux d'aubergines avec l'oignon en remuant régulièrement. Ajoutez ensuite la viande hachée en l'émiettant. Salez et poivrez, ajoutez le curry. Cuisez à nouveau pendant 5 minutes.
Incorporez le ketchup et versez 15 cl d'eau. Couvrez et laissez mijoter pendant une vingtaine de minutes. Remuez de temps en temps. C'est prêt, dégustez votre plat avec du yaourt !
